- Fresh strawberries
- 1 cup raw unsalted cashews
- 1 teaspoon vanilla extract
- 1 tablespoon raw local honey
- 1/2 teaspoon cinnamon
- 1 tablespoon water
Directions:
- Place cashews in bowl and cover with water and a splash of apple cider vinegar.
- Allow cashews to soak for at least two hours. The longer you soak, the creamier your cream.
- Strain cashews and rinse well.
- Add cashews, honey, cinnamon, vanilla and water to blender and puree until smooth.
- Add extra water as needed for desired consistency. I like mine a little thicker, but it's your choice!

I love a good strawberry. I remember going strawberry picking (eating) as a kid with my mom, and coming home to watch her make batches and batches of homemade strawberry jam. So this morning at the Farmer's Market, as I walked around deciding which pints (or pints) of berries to choose, I knew I wanted to whip up a little something when I got home. This simple yet delicious vanilla cashew cream did just the trick, and made the perfect summer dessert.
